Ingredients
- 1 Tbsp oil
- 1 lb bottom round beef cut into 1″ cubes
- 1 yellow onion diced finely
- 2 cloves garlic, minced
- 2 medium potatoes (white or golden) cut into 1″ cubes
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1/4 tsp Bolivian red pepper
- 1 tps paprika
- 1 cup white rice
- 1/2 cup frozen peas
Directions
- In oil, saute beef until just barely browned. Set aside and cover with foil.
- Saute onions, garlic, and spices in more oil, if needed, until onions are translucent.
- Add beef, cover and cook over medium heat for 15 minutes.
- Meanwhile, cook the rice according to directions.
- Add potatoes to the beef mixture and cook for 10 minutes.
- Add peas and simmer 5 more minutes.
- Serve over rice.
To make a nice Saicé, you have to let the juices come slowly… you have to be patient.
