Ingredients

  • 1 Tbsp oil
  • 1 lb bottom round beef cut into 1″ cubes
  • 1 yellow onion diced finely
  • 2 cloves garlic, minced
  • 2 medium potatoes (white or golden) cut into 1″ cubes
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp Bolivian red pepper
  • 1 tps paprika
  • 1 cup white rice
  • 1/2 cup frozen peas

Directions

  1. In oil, saute beef until just barely browned. Set aside and cover with foil.
  2. Saute onions, garlic, and spices in more oil, if needed, until onions are translucent.
  3. Add beef, cover and cook over medium heat for 15 minutes.
  4. Meanwhile, cook the rice according to directions.
  5. Add potatoes to the beef mixture and cook for 10 minutes.
  6. Add peas and simmer 5 more minutes.
  7. Serve over rice.

To make a nice Saicé, you have to let the juices come slowly… you have to be patient.
