Ingredients
- 4 c. fresh sweet basil leaves
- 5 cloves garlic
- 1 c. olive oil
- 3/4 c. grated Parmesan
- 2 T. pine nuts
- salt & pepper to taste
- 1 lb. ruffles or other pasta
Replacements:
If you don’t have enough of these items you can replace or supplement with the following:
- Pine nuts with walnuts
- Olive oil with vegetable oil
- 1 box frozen spinach for 1/2 of basil
Directions
- Combine garlic, nuts, and half of oil in blender or food processor until completely ground.
- Add basil, salt & pepper, and the rest of the oil.
- Blend until thick and smooth adding more oil if necessary.
- Stir in cheese.
- Cook pasta according to package directions. Drain.
- Toss immediately with pesto sauce.
