Ingredients

  • 4 c. fresh sweet basil leaves
  • 5 cloves garlic
  • 1 c. olive oil
  • 3/4 c. grated Parmesan
  • 2 T. pine nuts
  • salt & pepper to taste
  • 1 lb. ruffles or other pasta

Replacements:

If you don’t have enough of these items you can replace or supplement with the following:

  • Pine nuts with walnuts
  • Olive oil with vegetable oil
  • 1 box frozen spinach for 1/2 of basil

Directions

  1. Combine garlic, nuts, and half of oil in blender or food processor until completely ground.
  2. Add basil, salt & pepper, and the rest of the oil.
  3. Blend until thick and smooth adding more oil if necessary.
  4. Stir in cheese.
  5. Cook pasta according to package directions. Drain.
  6. Toss immediately with pesto sauce.
