Ingredients

  • 4 T. butter, softened
  • 4 T. powdered sugar
  • 4 egg yolks
  • ~1/2 box cornstarch
  • 225 g. dulce de leche
  • 100 g. coconut

Directions

  1. Preheat oven to 375 degrees.
  2. Cream butter and sugar together.
  3. Add the eggs, followed by cornstarch a little at a time, until you get a very soft dough.
  4. Roll dough 1/8″ thick.
  5. Cut into circle shapes.
  6. Bake for 6 minutes on greased cookie sheet
  7. Spread dulce de leche on a cookie and sandwich with another cookie.
  8. Add additional dulce de leche to the edges of the cookie and roll in coconut.
