Ingredients
- 4 T. butter, softened
- 4 T. powdered sugar
- 4 egg yolks
- ~1/2 box cornstarch
- 225 g. dulce de leche
- 100 g. coconut
Directions
- Preheat oven to 375 degrees.
- Cream butter and sugar together.
- Add the eggs, followed by cornstarch a little at a time, until you get a very soft dough.
- Roll dough 1/8″ thick.
- Cut into circle shapes.
- Bake for 6 minutes on greased cookie sheet
- Spread dulce de leche on a cookie and sandwich with another cookie.
- Add additional dulce de leche to the edges of the cookie and roll in coconut.
